Baked Chips and Healthy Spinach Dip

Ingredients:

  • 1 10-oz. box frozen spinach
  • 1/2 cup softened fat-free cream cheese
  • 1/2 cup sour cream
  • 2 Tbs. chopped red onion
  • 3 canned chili peppers chopped finely
  • 2 whole wheat tortillas
  • Cooking Spray

Directions:

Preheat oven to 350 degrees.  Thaw spinach and squeeze out water very thoroughly.  Mix spinach with all ingredients (except tortilla) in blender or food processor.  Cut tortilla into triangles.  Spray lightly with cooking spray.  Bake until golden and crisp, about 10-12 minutes.  Divide dip and chips into 3 servings.
